Ingredients

  • Base Potato Recipe (Pan Seared Potatoes)(6 WW Points):
  • 1 TBS Olive Oil
  • 1 lb fingerling potatoes, halved lengthwise
  • Kosher salt to taste
  • Mojo Topping (2 WW points):
  • 1 tsp Olive Oil
  • 2/3 cup tightly packed cilantro
  • 2 tsp lime juice
  • 1 tsp white wine vinegar
  • 1 clove garlic, minced
  • 1/4 cup sour cream (full fat)
  • Blue Cheese and Walnuts Topping (4 WW points):
  • 1/2 cup milk (whole)
  • 1 1/2 tsp flour
  • 1 oz blue cheese
  • 2 TBS toasted walnuts
  • 2 tsp parsley, chopped
  • Spinach and Garlic Topping (0 WW points):
  • 2 cloves garlic, minced
  • 4 cups baby spinach leaves
  • 2 TBS toasted pine nuts
  • 1/2 oz Asiago cheese, grated
  • Pickled Red Onion Topping (2 WW Points):
  • 1/2 cup white wine vinegar
  • 1 TBS mustard seeds
  • 1 TBS sugar
  • Kosher salt to taste
  • 1 cup sliced red onion
  • 2 tsp parsley

Preparation

Step 1

Potato Directions:

1. Heat a skillet over medium-high heat. Add oil and potatoes; cook 6 minutes. Cover, reduce heat to medium, and cook 8 minutes.

2. Sprinkle potatoes with salt; top with one of the four toppings.

Mojo Directions:

1. Combine first five ingredients in a blender. Blend until smooth. Stir into potatoes. Top with sour cream.

Blue Cheese & Walnut Directions:

1. Combine milk and flour in a saucepan, stirring; bring to a boil. Cook 1 minute. Add blue cheese. Cook 1 minute.
2. Top potatoes with sauce. Sprinkle walnuts and parsley on top.

Spinach and Garlic Directions:

1. Add garlic and spinach to potatoes; cook an additional 1 minute.
2. Top with pine nuts and Asiago cheese.

Pickled Red Onion Directions:

1. Combine white wine vinegar, mustard seeds, sugar, and salt in a saucepan; boil. Remove from heat; stir in red onion. Let stand 5 minutes. Drain.
2. Stir onion into potatoes. Top with parsley.
