Ingredients

  • 2 acorn squash
  • 1 onion
  • 1 clove garlic
  • 1 red bell pepper
  • 15 oz can black beans
  • 1 c frozen corn
  • 1 lb ground turkey
  • lime juice
  • sliced avocado

Preparation

Step 1

Halve and core squash. Brown turkey with onion and drain. Add all other ingredients and season to taste. Spoon mixture evenly into the cooked squash halves. Bake at 325 for 8-10 minutes. squeeze lime juice and avocado before serving.
