Ingredients

  • 2 cups flour
  • 1 cup white sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. salt
  • 2 eggs
  • 1 cup pumpkin puree
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil

Step 1

In large bowl, sift and whisk flour, sugar, pumpkin pie spice, baking powder, baking soda, and salt. Set aside.

In separate bowl, whisk eggs, blend in pumpkin, buttermilk, and oil. Pour mixture over dry ingredients and stir until moistened.

Spoon into large paper-lined muffin cups or spray with Pam, filling to top. Bake at 375 degrees for 18-22 minutes or until cake tester inserted in center comes out clean. Let cool on rack.
