- 8 ounces uncooked rigatoni
- 1 tablespoon olive oil
- 1 cup finely chopped onion
- 1 (10oz) package frozen chopped spinach
- 3 cups of cubed cooked chicken breasts
- 1 (14.5 oz) can Italian style diced tomatoes
- 1 (8oz) chive and onion cream cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 cups (6oz) shredded mozzarella
