Sausage-Spinach Stuffed Shells

Ingredients
- For Shells:
- Salt
- Jumbo Pasta Shells
- Olive Oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 lb sausage
- 1 pkg chopped spinach
- pepper
- 15 oz ricotta cheese
- 2 cups shredded mozzarella
- 1/2 cup grated parmesan
- 1/4 cup parsley
- For Sauces:
- 2 Tbsp unsalted butter
- 1 clove garlic
- 2 Tbsp flour
- 2 cups milk
- 1/2 cup heavy cream
- 1/3 cup grated parmesan
- salt
- nutmeg
- i can marinara sauce

Step 1
Preheat oven to 350
Cook shells-rinse and rinse in cold water-drizzle with olive oil.
Heat oil in large skillet-add onion, then garlic, then sausage.
Add spinach, 1/2 tsp salt, and pepper to taste. Remove from heat and let cool.
Combine spinach mixture with ricotta, 1 cup mozzarella, parmesan, parsley, and 1 tsp salt.
Stuff shells.
Make cheese sauce: Melt butter and garlic in saucepan, add flour when butter gets to foam, whisk constantly for 1 minute, add milk and cream, whisk constantly for 2-3 minutes until sauce is thick. Remove from heat and add parmesan, 1/4 tsp salt, and nutmeg to taste.
Brush pan with olive oil and 2/3 of the cheese sauce.
Add stuffed shells.
Top with remaining cheese sauce.
Top with marinara.
Top with 1 cup mozzarella.
Bake 35 minutes.
