Sous Vide Sirloin Steak with Herb Butter
- 1-2 lbs. sirloin steak
- Salt and pepper
- 1/4 tsp. dried thyme
- 1/4 tsp. garlic powder
- 2 Tbs. butter, at room temperature
- 1 Tbs. chopped fresh parsley
- 1 Tbs. chopped fresh basil
- 1 Tbs. chopped fresh tarragon
- 1/8 tsp. pepper
Preheat sous vide bath to 131 F. Sprinkle steak with salt and pepper; add to plastic bag. Add seasonings; seal. Place in bath.
Cook 3-10 hours.
Mash all butter ingredients together. Remove steak from bag; pat dry. Sear on very hot grill for 1-2 minutes per side. Serve topped with butter.
