Roasted Sweet Potato Hummus

Ingredients
- For the Sweet Potatoes:
- 2 medium sweet potatoes
- 1 Tbsp olive oil
- 1 tsp garlic powder
- Salt and Pepper to taste
- For the Hummus:
- 1 can Garbanzo beans
- 1/2 cup olive oil
- 1/2 tsp sweet paprika

Preparation
Step 1
Peel and cube sweet potatoes. Toss with olive oil, salt, pepper and garlic powder. Roast at 375 degrees for 45 minutes, until soft and slightly browned. Remove from oven and add to an food processor.
Drain and rinse garbanzo beans. Add to food processor with the sweet potatoes. Blend together while drizzling in olive oil until desired consistency. Add paprika. Add salt and pepper if needed.
