Dijon Potatoes with Garlic

Ingredients

  • 3 pounds tiny new potatoes, sliced
  • 4 large cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 1/2 tablespoons chopped fresh rosemary
  • 1 1/2 tablespoons white wine vinegar
  • 1 tablespoon Dijon-style mustard
  • Fresh ground pepper, to taste

Step 1

In a large mixing bowl combine sliced potatoes, minced garlic cloves, chopped rosemary, 1 tablespoon olive oil and salt; toss gently. Transfer to au gratin pan and roast in 375°F oven for 1 hour, stirring every 20 minutes. Remove from pan.

Meanwhile, in a screw-top jar combine 1 tablespoon olive oil, vinegar, mustard and pepper. Cover and shake well. Pour mustard-vinegar mixture over grilled potatoes and toss gently to coat.
