Heirloom Tomato Caprese Salad with Basil Vinaigrette

When organic heirloom tomatoes are on sale, as big as a dinner plate, there is no way I'm passing them by!
This simple summer salad is colorful and flavorful, especially with a quick homemade basil vinaigrette.

Ingredients
- For the vinaigrette:
- 4 to 6 slices heirloom tomatoes (choose different colors and sizes will vary)
- Fresh mozarella cheese (sliced)
- Equipment needed: Blender
- 1 part vinegar to 3 parts olive oil is the ratio
- 1 tablespoon white balsamic vinegar (or quality white wine vinegar)
- 4 tablespoons extra-virgin olive oil
- 1/2 teaspoon Dijon mustard
- 1/2 cup fresh basil leaves
- 1 small clove fresh garlic
- Kosher salt & fresh cracked pepper, to taste

Step 1
Slice the tomatoes and mozzarella. Layer on a serving plate.
For the dressing:
Combine all the ingredients and blend until smooth.
Taste and adjust seasonings to your preference.
Pour dressing over tomatoes and cheese. Garnish with fresh basil and serve with extra salt & pepper, as desired.
