Tomato Salad with Orzo and Feta

Ingredients

  • 3 lb. vine-ripened tomatoes (red, orange, and yellow) seeded and quartered
  • 1 box (16 oz.) orzo, cooked
  • 1/2 cup olive oil
  • 1/3 cup minced chives
  • 6 tbsp chopped fresh basil
  • 4 cloves garlic, minced
  • 1 tbsp grated lemon zest
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese

Preparation

Step 1

In large bowl combine tomatoes and orzo.
In small bowl combine oil, herbs and lemon zest.
Pour over orzo and toss well.
Season with salt and pepper, sprinkle with feta.
