Ingredients
- 12 chicken thighs(2 1/2-3 lbs.) skinless & boneless
- 2 14 1/2 oz. cans diced tomatoes
- 2 tblsp. quick cooking tapioca
- 1 tblsp. grated fresh ginger
- 1 tblsp. fresh cilantro
- 4 cloves garlic, minced
- 2 tsp. brown sugar
- 1/2 tsp. crushed red pepper
- 1/2 tsp. salt
- 3 cups cooked couscous

Step 1
Put the chicken in the crockpot.
Drain 1 can tomatoes. Combine both cans of tomatoes & juice of 1 can, tapioca, ginger, cilantro, garlic, brown sugar, red pepper, and salt. Pour over chicken. Cook on low 6-7 hours or high 3-3 1/2 hours. Serve with couscous.
