Pumpkin Roll

Ingredients

• 3 eggs
• 1 cup sugar
• 1 tsp soda
• 1 tsp salt
• 1/2 tsp cinnamon
• 2/3 cup pumpkin
• 3/4 cup flour

Preparation

Step 1

Grease cookie sheet, line with wax or parchment paper. Combine eggs and sugar
and add pumpkin and mix well. Add flour, cinnamon, soda and salt and mix.
Pour batter on cookie sheet and bake at 350 degrees for 15 min.
Cool slightly, remove and place cake on towel with powdered sugar on it.
Remove wax or parchment paper and roll cake up in towel and cool
completely.
Filling: 2 tbsp soft oleo, 1 8 oz cream cheese, 1 tsp vanilla and 1
cup powdered sugar, mix well.
Unroll cake and add filling and roll back up, use a little powdered sugar
if necessary.
