Spaghetti with Clams and Garlic

Ingredients
- 1 pound spaghetti (preferably DeCecco) We usually use ½ the pasta
- Salt
- ¼ cup virgin olive oil
- 4 garlic cloves minced
- ½ tsp crushed red pepper
- 2 dozen little neck clams washed and scrubbed well make sure all are unbroker and tightly closed
- ¼ cup water
- ¼ cup chopped parley
- Fresh ground pepper

Preparation
Step 1
In large pot of boiling water cook spaghetti till ala dente
Drain well
In a large deep skillet heat the olive oil at medium, add minced garlic and crushed red pepper til browned, about 1 ½ minutes
Add the clams and ¼ cup water
Cover and simmer just til clams open 5-8 minutes
Discard any clams that did not open
Add the spaghetti and the chopped parsley to the clams in the skillet and season with pepper
Toss overe moderately high heat until spaghetti absorbs some of the juices and its hot 1-2 min
Serve right away (I serve it from the pan)
