Prosciutto-Wrapped Pears with Balsamic Maple Drizzle

Ingredients

  • 1/4 cup balsamic vinegar
  • 2 tbsp. pure maple syrup
  • 1 tsp. fresh lemon juice
  • 1 large, firm, ripe pear (Bosc), halved and cored
  • 4 pieces thinly sliced prosciutto, halved lengthwise
  • 1 cup baby arugula

Step 1

1. In small saucepan, bring vinegar, maple syrup, and lemon juice just to a boil. Lower heat and simmer until reduced by half and slightly syrupy, about 4 minutes, cover and let sit.
2. Meanwhile, cut each pear half into 4 wedges, for a total of 8 pieces. Lay prosciutto slices vertically on a work surface. Place 1 piece of pear, crosswise, on the bottom third of each prosciutto slice, then place a few arugula leaves on top of each pear slice. Roll prosciutto from the bottom, repeat with remaining wedges, arrange bundles on serving plate. Drizzle with balsamic glaze.
