Cheesy Zucchini and Red Onion Flatbread

Ingredients
- Non stick vegetable spray
- Parchment paper
- 1 10 ounce refrigerated pizza dough (or see note)
- ¾ cup garlic and herb spread such as Alouette
- ¾ cup grated parmesan cheese
- 3 tablespoons chopped fresh Italian parsley
- 1 small red onion or a sweet white onion
- 1 7 to 8 inch zucchini cut into 1/8th inch rounds
- Olive oil

Preparation
Step 1
Preheat oven to 400
Line baking sheet with parchment paper
Spray with non stick spray
Unroll pizza dough onto parchment (if you are using other dough see note)
Spread half of cheese mixture over ½ of the long side of dough leaving a ½ inch border on edge
Sprinkle with half of parmesan and 2 tablespoons of the parsley
Using parchment as aid fold over filled (do not seal edges)
Spread remaining herb cheese over top
Sprinkle remaining parmesan
Slice onion into 1/8th iinch rings and take off outer till it’s a 2 inch round
Arrange one row of zucchini down long edge (1/2 inch from edge)
Then a row of onion rounds, then a row of zucchini
Brush with olive oil
Sprinkle with salt and pepper
Bake until puffed and deep brown on edges about 24 min
Sprinkle with the rest of the parsley
