Potato Cauliflower Soup

This is one of our favorite recipes in our family. Sprinkle on some bacon and a little cheddar cheese and WOW!!!

Ingredients

  • 1 onion, chopped
  • 2 Tbsp butter
  • 3 medium potatoes, peeled and diced
  • 1 head of cauliflower, chopped
  • 2 cups of water
  • 4 chicken bullion cubes
  • 1 c milk
  • 1 8 oz block of cream cheese, sliced up
  • pepper to taste

Step 1

In a large pot, saute onion in butter. Add potatoes, cauliflower, water and chicken bullion. Bring to a boil and cook until potatoes and cauliflower are falling apart, about 15-20 minutes. Use a potato masher to mash most of the large pieces until you have a chunky, creamy soup. It will thicken up. Add milk and cream cheese, cooking on low until melted. Add pepper to taste.
Ladle into bowls and top with crumbled bacon and shredded cheese, if desired, but it is wonderful alone!
