Ingredients
- 1 c couscous
- 1 garlic clove, minced
- 1 jalapeno, seeded & thinly sliced
- EVOO
- 1/4 c rice vinegar
- 1/4 c chopped mint
- 1/2 t salt
- 1/4 t pepper
- 4 yellow squash (6ozs each), halved lengthwise
- 2 c watercress
- 1/4 c crumbled feta
- 10 sliced scallions

Preparation
Step 1
1. Put couscous in a heatproof bowl & add 1.5c boiling water.
2. Cover & let stand 5 min.
3. In a med bowl, combine garlic, jalapeno, EVOO, rice vinegar, mint, salt & pepper.
4. Fluff couscous w/a fork & stir in dressing.
5. Preheat grill to high heat.
6. Drizzle squash w/1T EVOO & season w/more salt.
7. Grill until charred & tender, 3 min per side & slice into half-moons.
8. Add to couscous along w/ watercress, feta, & scallions & toss.
