Sausage and Sweet Potatoes
The only way I can get my hubby to eat sweet potatoes!!! I usually serve this with scrambled eggs and toast for dinner.

Ingredients
- 2 medium sweet potatoes
- 1/4 to 1/2 c butter, cold and very thinly sliced
- cinnamon
- 4 Tbsp brown sugar
- 1 lb bulk sausage, we like Maple
- 1/4 c water

Preparation
Step 1
Heat oven to 375.
Peel and thinly slice potatoes. Cook and drain sausage.
In an 8x8 casserole dish, place a layer of potatoes (1 potato). Sprinkle 2 Tbsp brown sugar across top. Place half of the thinly sliced butter over the casserole. Sprinkle with cinnamon. Spoon on half of the sausage. Repeat layers once more.
Pour water over top, cover with foil and bake 50-60 minutes.
