Endive and Pear Salad

Ingredients

  • 2 Tbsp red wine vinegar
  • 2 Tbsp fresh cilantro
  • 1 Tbsp olive oil
  • 1 Tbsp minced shallot
  • 1/2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 ripe pear, cored and sliced thin
  • 2 large heads Belgian endive

Preparation

Step 1

1. Combine vinegar, cilantro, shallots, mustard, salt, and pepper in medium bowl. Add pear. Toss gently to coat.

2. Separate the outer leaves from the heads of endive. Chop remaining endive and mix with pear mixture. Arrange leaves on 4 plats. Spoon mixture over lettuce. Serve immediately.
