Ingredients

  • 1 large can of sweet potatoes, drained and mashed
  • 2 eggs, beaten
  • 1 c. sugar (or less)
  • 1 t. vanilla
  • milk
  • 3 T. margarine, melted
  • cinnamon
  • 1 c. brown sugar
  • 1/3 c. flour
  • 1/3 c. margarine
  • 1 c. pecans, chopped

Preparation

Step 1

Mix potatoes, eggs, sugar and vanilla together. Add milk until thin along with margarine and cinnamon to taste. Place in an 8x8 pan. Prepare topping by mixing the brown sugar, flour and margarine (margarine can be cut in with a pastry blender or melted and blended in). Mix in nuts and spread topping on top of potato mixture.

Cook at 350 degrees for 55-60 minutes.
