  • 1/2 c quinoa
  • 3 tbsp olive oil
  • 2 tbsp sherry or red wine vinegar
  • salt and pepper
  • 1/2 lb tomatoes, cut up
  • 1/2 English cucumber, sliced
  • 4 cups spinach or arugula (3 oz)

Step 1

1. Cook quinoa according to package directions and let cool.

2. In large bowl, whisk oil, vinegar, 1/2 tsp salt, and 1/4 tsp pepper. Add quinoa, tomatoes, cucumber and spinach and toss to combine; season with 1/4 tsp each salt and pepper.
