Cranberry Pumpkin Bread II

Ingredients
- 3 cups flour
- 5 tsp. pumpkin pie spice
- 2 tsp. baking soda
- 1 tsp. salt
- 4 eggs
- 3 cups sugar
- 1/2 cup fresh orange juice
- 1 can (15 oz.) pumpkin
- 1 cup cooking oil
- 1 cup dried cranberries

Preparation
Step 1
Combine flour, spice, soda and salt in a large mixing bowl.
Beat eggs with sugar, orange juice, oil and pumpkin just until blended. Add dry ingredients; mix until moistened.
Stir in cranberries.
Pour into two 9x5 inch greased and floured loaf pans.
Bake at 350º for 1 hour, or until paring knife comes out clean, when stuck in the center.
Cool 10 minutes and then remove from pans to racks and let cool completely.
NOTE:
Can also used fresh or frozen cranberries in place of the dried.
