Shrimp & Pineapple with Rum Butter

Ingredients

  • 2 T fresh lime juice
  • 2 T olive oil
  • 2 t minced fresh gingerroot + 2 t
  • 2 t minced garlic
  • 1 t red pep. flakes
  • 16 medium shrimp, shelled/deveined
  • 1/3 lb sliced prosciutto
  • 1 small pineapple and cubed
  • 2 T minced shallots
  • 1/2 c dark rum
  • 6 oz butter cut in pieces
  • 1/4 t salt
  • 1/8 t cayenne
  • 1/2 c minced fr.cilantro

Preparation

Step 1

Combine lime juice, oil, 2 t ginger, garlic, pepper flakes and pineapple - toss. Marinate 15 min. Wrap shrimp with prosciutto & thread skewers with shrimp & prosciutto -grill. Combine rum, shallots & 2 t ginger. Bring to boil. Reduce heat and simmer until reduced. Whisk in butter-1 T at a time. Cook until coats back of spoon. Remove from heat -add sal and cayenne. Dip skewers in sauce to serve.
