Zucchini Bread (muffins)

Ingredients

  • Topping:
  • 3 c flour
  • 1 t salt
  • 1 t baking soda
  • 1 t baking powder
  • 1 T cinnamon
  • 2 egg whites
  • 1 banana, mashed
  • 1/2 c canola oil
  • 1/2 c apple sauce
  • 1 c white sugar
  • 1 c brown sugar
  • 1 T vanilla
  • 3 c zucchini
  • 1 c nuts
  • 1 c dark chocolate chips
  • 1/2 c oats
  • 1/2 c brown sugar
  • 1/4 c flour
  • 1/4 t cinnamon
  • 1/4 c butter, melted

Preparation

Step 1

1. Grease and flour a loaf pan or use muffin liners for muffins. Preheat oven to 325°

2. Sift together the flour, salt, baking soda, baking powder and cinnamon.

3. In a separate bowl combine the eggs, banana, oil, applesauce, sugars and vanilla together. Add it to the dry and stir. Batter will be thick at this point.

4. Add the zucchini, nuts and chocolate chips and stir in. Batter should be much looser with the wet zucchini.

5. Combine all topping ingredients in a bowl and stir until crumbly. Top either muffins or loafs with the topping.

6. Bake a loaf for 45-55 minutes, mini loaf for 30 minutes, regular muffins for 20-25 minutes.
