SHRIMP & FENNEL SPAGHETTI

Ingredients

  • 2 Med fennel bulbs
  • 3 Garlic cloves
  • 1 lb spaghetti
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1/2 tsp crushed red pepper
  • 1 can (28 oz) no-salt-added diced tomatoes
  • 1 lb peeled deveined med (26-30ct) shrimp

Preparation

Step 1

1. Heat large covered saucepot of salted water to boiling on high
2. While water heats, core and thinkly slice fennel, reserve fronds for
garnish.
3. Thinly slice garlic
4. Add spaghetti to boiling water & cook for 2 minutes less than label
directs
5. In a large skillet, heat oil on medium high.
6. Add fennel, garlic, sugar, pepper & 1/4 tsp salt. Stir well.
7. Cover & cook 5 minutes or until tender and brown, stirring occassionaly
8. Stir in tomatoes & cook 5 minutes
9. Add shrimp to spaghetti in boiling water.
10. Cook 2 minutes with pasta.
11. Drain spaghetti and shrimp & return to pot
12. Add tomato mixture & 1/4 tsp salt.
13. Toss on medium-low 2 minutes or until well mixed.
14. Garnish with fennel fronds.
