Zesty Black Bean Stew

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cans black beans, drained
  • 1 can corn, undrained
  • 1 can condensed tomato soup
  • 1 can vegetable broth
  • 2 cups water
  • 1/4 tsp pepper
  • 1 tbsp chili powder
  • 1/2 cup brown rice



Step 1

Heat olive oil and add onion. Cook until tender. Stir in all ingredients except rice. Bring to a boil, reduce to simmer and cook for 10 minutes.

Add rice. Simmer for 20 to 30 minutes longer or until rice is tender.
