Ingredients

  • Filling:
  • 1 c. pumpkin
  • 1/2 c. sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • Blend ingred together. Set aside.
  • Cookies:
  • 3 c. flour
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 c. rolled nuts
  • 1/2 c. brown sugar
  • 3/4 c. soft shortening
  • 1 egg
  • 1/4 c molasses

Preparation

Step 1

1. Mix & sift together flour, salt & baking soda. Combine shortening, egg & molasses, mix well. Add oats. Chill 1/2 hour. Roll out 1/8 inch thick; place 1 tablespoon filling on 1 cookie & cover with 2nd cookie. Press together, slit top. Bake 375 degrees for 15 min.
