Chipotle Mashed Potatoes

Ingredients
- 5 large baking potatoes, peeled and cut into 1 inch chunks.
- 1/4 C butter
- 1 (16 oz) container of sour cream
- 1 C shredded sharp Cheddar cheese
- 1 t minced chipotle pepper in adobo sauce
- 1 t adobo sauce from chipotle peppers (this product in in the international food section at the store for Mexican foods, and its a canned pepper)
- 2 1/2 t salt

Step 1
In a large saucepan or cooking pot, put in potatoes, and enough water to cover potatoes. Bring to a boil
over medium-high heat; reduce heat, and simmer for 8 to 10 minutes or until potatoes are fork tender. Drain well. Add butter, and let stand until butter melts. Add sour cream, cheese, chipotle pepper, adobo sauce, and salt. Using a potato masher, mash potatoes to desired consistency, Serve right away.
