Chicken & Asparagus Lo Mein

Ingredients

  • 8 oz. Lo Mein noodles or fettucine
  • 2 scallions, divided into white/green
  • 1 egg white
  • 1 1/2 t sesame oil
  • 1 T fresh ginger
  • 2 garlic cloves, minced
  • 2 1/2 t + 1 T cornstarch
  • 2 T cold water
  • 1 lb. chicken strips
  • 1 t sesame seeds
  • 3/4 c chicken broth
  • 1 red pepper
  • 1/4 c hoisin sauce
  • 1 lb. asparagus
  • 3 T soy sauce
  • 2 T balsamic vinegar

Step 1

Cook noodles. Chop scallions, separately. Comine egg white, ginger, garlic & 1 t cornstarch; combine with white scallions. Stir in chicken; cover & refrigerate. Combine broth, hoisin, soy, vinegar and oil; reserve. Heat skillet, add sesame seeds, cook 2-3 mins. Remove seeds. Little cooking spray, add chicken, cook until brown. Remove. Cook asparagus & pepper. Add broth mixture; simmer. Combine remaining cornstarch with water; stir into skillet. Stir in reserved chicken. Transfer noodles to platter; top with chicken mix. Sprinkle with reserved sesame seeds and scallions.
