Potato Croquettes

This is a great appatizer for any outdoor gathering. You can change up the meat choice to to suit your taste. A different pepper(Anaheim, Ancho, Jalapeno, etc) will also give you some different results. The key to a crunchy croquette is the Panko bread crumbs.

Ingredients

  • 6 Medium potatoes
  • 3/4 lb meat (Ham, Hamburger, Bacon/Sausage mixture, Prosciutto)
  • 2 cups shredded cheese (Sharp cheddar, Colby Jack, etc)
  • 1/2 medium onion (finely chopped)
  • 2 tablespoons chopped garlic
  • 1 jalapeno (finely chopped)
  • 1 Teaspoon salt, Pepper to taste
  • 3 eggs (separate two yolks for mixture, the rest serves as a wash for the croquettes)
  • 1 1/2 cups flour, 1 1/2 cups Panko bread crumbs

Preparation

Step 1

Boil potatoes to medium softness. Mash potatoes to a chunky state. Heat fryer to 375o. Cook meat to desired doneness. Add meat, cheese, onion, garlic, jalapeno, 2 egg yolks, and salt/pepper to taste. Roll mixture into golf ball sized balls. Place on wax paper and chill in freezer for 1 hour. Mix bread crumbs and flour. Put croquettes into remaining eggs mixed into a wash and roll in flour/bread crumb mixture pressing mixture into croquettes. Fry to golden brown (1-2 minutes). Serve hot.
