Artichoke/ Bean Dip

Ingredients

  • 1 can white kidney beans
  • 1 tsp. fresh lemon juice
  • 1 can artichoke hearts
  • 1 c. shredded light swiss or monterey jack cheese
  • 1/2 c. grated parm
  • 1/3 c. light mayo
  • 2 tsp. minced garlic
  • 1 tsp. worcestershire sauce
  • 3-4 dashes hot pepper sauce
  • 1/4 tsp. fresh ground black pepper
  • 4 slices bacon, cooked & crumbled
  • 2 tbsp. chopped green onions

Step 1

Preheat oven to 350. Puree white beans & lemon juice in food processor till smooth. Chop artichokes into smaller pieces. Transfer mix to med. bowl & stir in remaining ingred., except bacon & gr. onions, mix well. Spoon artichoke-bean mixture into med. casserole dish that has been sprayed w/ cooking spray. Sprinkle w/ bacon and onion. Bake 25 mins. uncovered till bubbly.
