Grilled Halibut Packets with peppers & artichokes

Ingredients

  • 1 yellow bell pepper, sliced
  • 4 Roma tomatoes, chopped
  • 1 large onion, chopped
  • 1 c. canned or frozen artichokes, drained and quartered
  • 8 cloves garlic, minced
  • 1 T. smoked paprika
  • 1/2 c. dry white wine
  • 1 lemon, thinly sliced
  • 4 Halibut fillets (5-6 oz each)
  • Chopped Parsley

Preparation

Step 1

Preheat grill to medium heat.

Combine bell pepper, tomatoes, onion, artichoke hearts, garlic, paprika, and salt in a bowl. Add wine and mix.

Cut 4 pieces of heavy duty foil about twice the distance arounf the food to be wrapped. Fold each sheet in half to form a double layer. Divide vegetable mixture into 4 portions. Place one portion in the center of each piece of foil.

Place one fish fillet on each of the vegetables. Top each fillet with lemon slices. Close packet.

Grill packets, covered over direct heat for 10 minutes.

Garnish with parsley.
