Pork Loin with Plum Sauce

Ingredients
- 1 c chopped onion
- 3 T butter
- 1 c plum preserves
- 1/2 c packed brown sugar
- 2/3 c water
- 3 T lemon juice
- 1/3 soy sauce
- (for pork loin roast)
- 6 lb pork loin roast
- Onion salt & garlic salt to taste

Preparation
Step 1
Sauce:
Sauté onion in butter in saucepan until tender
Add preserves, brown sugar, water, lemon juice & soy sauce; mix well
Loin:
Sprinkle the pork generously with onion salt & garlic salt
Place fat side up in roasting pan
Bake @ 325˚ for 30 min per lb or until nearly cooked through
Remove roast fro oven about 20 min before cooking is complete & discard fat
Baste with 1/2 plum sauce
Bake for remaining 20 minutes or until cooked through
Serve with remaining plum sauce
