Ingredients
- Dressing:
- 6 C. Baby Spinach
- 4 C. Baby Arugula
- 1/4 Sm. Sweet White Onion, thinly sliced
- 2 C. Hulled & Sliced Strawberries
- 1/4 C. Toasted, sliced almonds
- 6 Slices Prosciutto
- 1/2 tsp. Dijon Mustard
- 1 Tbsp. Balsamic Vinegar
- 1 Tbsp. White Wine Vinegar
- 4 Tbsp. Extra-Virgin Olive Oil
- Salt & Freshly Ground Black Pepper To Taste

Preparation
Step 1
Combine the spinach, arugula & onion in a lg. bowl. Sprinkle the strawberries lightly with some freshly cracked pepper. Add half of the berries to the bowl of greens; set aside. Make the dressing by whisking the mustard & vinegars in a bowl. Slowly add the oil till the mixture is smooth & thick. Season with salt & pepper to taste. Add the dressing to the salad & toss lightly. Transfer the salad to one lg. salad bowl. Garnish with remaining strawberries, almonds & strips of prosciutto.*Another option is to put slices of prosciutto in the oven & cook till completely crisp, then add to salad.
