Ingredients
- 3 CUPS SALAD SHRIMP THAWED RINSED
- 1/2 CUP FRESH LIME JUICE (1-2)LIMES
- 1/2 TSP EACH SALT AND PEPPER
- 1/2 CUP OLIVE OIL
- 1 RED ONION FINELY CHOPPED
- 1 GREEN PEPPER FINELY CHOPPED
- 1 CUP FRESH CILANTRO, CHOPPED
- 2-3 VINE RIPE TOMATOES 1/2" DICE
- 1-2 JALAPENOS CHOPPED
- 2 HAAS AVOCADOS

Preparation
Step 1
TOSS SHRIMP WITH LIME JUICE IN A LARGE GLASS MIXING BOWL. COVER BOWL AND REFRIGERATE FOR 1/2 HOUR.
ADD ALL REMAINING INGREDIENTS, EXCEPT AVOCADO, TOSS GENTLY. COVER AND RETURN TO FRIG FOR ATLEAST 1/2 HOUR
JUST BEFORE SERVING CHOP AVOCADOS INTO 1/2" PIECES. ADD TO BOWL AND TOSS.
SERVE WITH TORTILLA CHIPS.
YOU CAN ADD ADDITIONAL SALSA IF YOU WISH.
