Ingredients

  • 6 zucchini
  • 1/2 pound ground pork sausage
  • 1/3 cup celery, chopped
  • 1/4 cup onion, chopped
  • 2 tablespoons green pepper, diced
  • 2 tablespoons parsley, minced
  • 1 cup bread crumbs
  • 1/4 cup poultry seasoning
  • 1/4 teaspoon tarragon
  • Salt and pepper

Step 1

Cut 6 zucchini in halves, lengthwise; scoop out seeds and arrange cut-side up in baking pan.

Brown sausage in skillet, stirring to keep crumbly. Remove meat and drain all but 3 tablespoons drippings from pan.

Heat drippings and add celery, onion, & green pepper. Cook until tender, but not browned. Remove from heat and mix in parsley, bread crumbs, poultry seasoning, tarragon,& salt and pepper to taste. Stir in sausage meat and lightly pack in zucchini shells.

Pour 1 inch water or broth in pan around stuffed shells and bake at 350 degree oven for 40 minutes or until zucchini is tender.
