Salmon & Spinach in Parchment

Ingredients

  • 8 oz ( 8 cups) baby spinach
  • 1 tbsp grated orange zest plus 3 peeled oranges sliced 1/4" thick
  • 4 skinless salmon fillets
  • 2 " piece thinly sliced ginger
  • 1 shallot thinly sliced
  • S & P
  • 2 tbsp olive oil

Preparation

Step 1

1. Preheat oven to 400F. Divide spinach between four 16" long pieces of parchment paper. Top with orange zest, orange slices, salmon, ginger, shallots; salt and pepper and drizzle with oil.
2. Bring long ends of paper together and fold over 3 times. Tuck end underneath to secure.
3. Place packets on baking sheet and bake until packets are puffed and salmon is cooked through - 15-18 minutes. Do not overcook
