  • Crust:

  • cups fine graham cracker crumbs

    tablespoons sugar

    stick unsalted butter, melted

  • For filling:

  • 16

    ounces cream cheese at room temperature

  • 1

    cup plus 2 tablespoons sugar

  • ¾

    cup fresh key lime juice

  • ½

    cup sour cream

  • ½

    teaspoon vanilla

  • tablespoons all-purpose flour

  • ¼

    teaspoon salt

    large eggs


Preheat oven to 350 degrees To make the crust: 1. Butter the bottom and side of a 9 inch springform pan. 2. stir together the crumbs, sugar and butter in a bowl with a fork until well combined, press evenly onto the bottom and one-third up the side of the pan 3. Bake for 8 minutes and cool in pan on a rack. To make the filling: 1. Reduce oven temperature to 325 degrees. 2. Beat cream cheese at a medium speed until fluffy, then beat in sugar. 3. Add lime juice, sour cream, and vanilla and beat until smooth. 4. Mix in flour and salt at low speed, scraping down the sides as needed, until just incorporated. 5. Add eggs all at once and mix just until incorporated. 6. Pour filling into crust and set springform in a shallow baking pan. Bake in the middle of oven until set in center - 1 hour to 1 hour and 10 minutes. Cool completely in springform on a rack. 7. Run a knife around the edges of the pan and remove the sides.
