French Onion Salisbury Steak with Cheese Toast

Ingredients

  • CHEESE TOAST:
  • 1 1/4 pound of ground chuck
  • 1/4 cup fresh parsley
  • 2 tablespoons of minced scallions
  • salt and pepper
  • 2 tablespoons of flour
  • 1 tablespoon oil
  • 2 cups onion, sliced
  • 1 teas. sugar
  • 1 tablespoons of minced garlic
  • 1 tablespoon of tomato paste
  • 2 cups beef broth
  • 1/2 cup dry white wine
  • 1/2 teas. thyme leaves, minced
  • minced parsley - garnish
  • 4 slices of french or a good Italian bread, toasted
  • butter for toast
  • garlic to rub on toast
  • 1/4 cup grated Swiss cheese
  • 1 tablespoon grated Parmesan cheese
  • Preheat oven to 400° and pile cheeses on buttered, garlic toast...bake until bubbly.

Preparation

Step 1

Combine chuck, parsley, scallions, salt and pepper.

Divide evenly into 4 portions and shape into patties.

Dredge patties in 2 tablespoons of flour. Reserve some flour.

Heat 1 tablespoon of oil in saute pan over medium heat.

Add patties and saute 3 minutes on each side or until browned.

Remove from pan.

Add onions and sugar to pan.

Saute 5 minutes and stir in garlic and tomato paste and saute, cook 1 minute until paste begins to brown.

Sprinkle onions with reserved 1 tablespoon of flour; cook 1 minute more.

Stir in broth and wine, salt and thyme.

Return meat to pan and bring soup to boil. Reduce heat to medium-low, cover, and simmer 10 minutes.
