Ingredients
- For pear topping:
- 5 pounds sweet potatoes, scrubbed
- 1/2 cup freshly squeezed orange juice
- 1/2 cup heavy cream
- 6 tablespoons butter
- 1/4 cup light brown sugar
- 1 teaspoon ground nutmeg
- 1/26 teaspoon ground cinnamon
- Kosher salt and freshly ground
- black pepper to taste
- 4 tablespoons butter
- 4 Bose pears, peeled, cored and cut into eights
- 1/4 cup light brown sugar
- 1 teaspoon freshly grated ginger, or to taste
- 1/4 teaspoon dried sage

Step 1
Prepare potatoes; Prick each potato several times with a fork. Bake in a preheated 375° oven until soft, about 1 hour. Remove from oven. When cool enough to handle, break open potatoes and scoop flesh into the bowl of an electric mixer fitted with a paddle attachment. Add remaining ingredients and mix on low speed until just combined. Transfer to a large baking dish. Prepare pear topping; Melt butter in a skillet over medium-high heat. Add pear wedges, brown sugar, ginger, and sage. Cook, stirring occasionally, until pears are lightly browned on both sides. Pour mixture over sweet potatoes toes. Bake in a preheated 375° oven until heated through, about 30 minutes .
Serves 6 to 8 .
