Grilled Lemon-Herb Chicken

Ingredients

  • 1- 5 lb roasting chicken
  • 2 Tablespoons chopped fresh parsley
  • 1 Tablespoon chopped fresh thyme
  • 3 Tablespoons fresh lemon juice
  • 1 tsp salt
  • 1/2 salt
  • 1/2 teasp freshly ground black pepper

Step 1

1. Re move and discard giblets and neck from chicken. Rinse chicken with cold water, and pat dry Trim excess fat. Place chicken, brast side down ona cutting survace. cut chicke in half lenghtwise along backbone (do not cut through breast bone). Turn chicken over. Starting at neck cvity, loosen skin from breast and drumsticks by inserting fingers genly pusihng between skin and meat.
2. Combine parsley, thyme, juice salt and papper- rub mixture aunder loosened skin and over breast and drumsticks. Gently press skin to secure. Place chicken in a large zip top platic bag. SEal and marin in refrigerator 20 minutes.
3. Preheat grill to meium heat.
4. Place chicken, sin side up and on grill rack coated with cooking spray. Grill 55 minutes or until a thermomenter inserted into meaty part of thigh resiters 180. REmove from grill, cover and let stand 10 minutes. Yield 5 servings
