ROTISSERIE GRillED CORNISH HENS STUFFED WITH FRESH HERBS AND GOAT CHEESE

Ingredients

  • 4 one-pound Cornish hens
  • Vegetable oil
  • Salt and freshly ground black
  • pepper to taste
  • 2 large fresh lemons, juiced
  • 1 tablespoon each fresh chopped parsley, sage thyme, and rosemary
  • 1/2 pound goat cheese
  • 1 cup canned chicken broth

Preparation

Step 1

Rinse hens inside and out and pat dry.
Brush hens with oil and season with
salt and pepper. Rub cavities with half
of the lemon juice. Carefully loosen skin
from each breast. Mix herbs and goat cheese together in a bowl. Using half of the cheese mixture, stuff hens between skin and breast. Fill cavities with remaining cheese.
Mix Chicken broth and reserved lemon juice in a bowl.
Preheat rotisserie grill on high. Truss
hens and skewer onto rotisserie rod.
Grill, basting with broth mixture occasionally, until golden brown and just cooked through, about 1 hour. Remove hens from rod. Set aside 10 minutes before serving. Serves 4
