Ingredients
- 2 Cups broccoli florets
- 3/4 cup white beans, drained
- 1/2 cup onions, thinly sliced
- 1 Tablespoon olive oil
- 1/4 teaspoon salt
- 1 1/2 Tablespoons lemon juice
- 1 English muffin
- 1/4 cup parsley, chopped

Preparation
Step 1
Steam broccoli for 4 minutes.
Split muffin and toast until lightly browned on both sides. Cut into cubes.
Place broccoli, beans, and onion in a large bowl.
Combine olive oil and salt, toss vegetables with mixture.
Add lemon juice, muffin cubes, and parsley; toss again.
Serve warm.
