Lemon-Cornmeal Cake (Aunt Ludge's)

Ingredients
- Baking spray w/ flour
- 2 1/2 C flour
- 1/2 C yellow cornmeal
- 2 t baking powder
- 1/2 t each, baking soda & salt
- 2 sticks (1C) unsalted butter, soft
- 1 3/4 C sugar
- 1 T grated lemon zest
- 1/4 C lemon juice
- 4 lg eggs
- 1 C buttermilk or plain yogurt (stirred)
- Sugar Glaze
- 1 C sugar
- 1/3 C lemon juice

Preparation
Step 1
Heat oven to 325. Mix flour & cornmeal, baking powder, soda & salt. Beat in lg bowl butter, sugar, lemon zest and juice. Mix on med. til light & fluffy. Beat in eggs one @ a time. Alternatly beat in flour mix & buttermilk til batter is smooth. Scrape into 10 C tube/bundt pan. Level w/ spatula.
Bake 55-65 mins til toothpick comes out clean. Cool 5 mins.
For sugar glaze: whisk til mixed. Brush over hot cake. Let cake set overnight before serving.
