Lemon-Cornmeal Cake (Aunt Ludge's)

Ingredients

  • Baking spray w/ flour
  • 2 1/2 C flour
  • 1/2 C yellow cornmeal
  • 2 t baking powder
  • 1/2 t each, baking soda & salt
  • 2 sticks (1C) unsalted butter, soft
  • 1 3/4 C sugar
  • 1 T grated lemon zest
  • 1/4 C lemon juice
  • 4 lg eggs
  • 1 C buttermilk or plain yogurt (stirred)
  • Sugar Glaze
  • 1 C sugar
  • 1/3 C lemon juice

Preparation

Step 1

Heat oven to 325. Mix flour & cornmeal, baking powder, soda & salt. Beat in lg bowl butter, sugar, lemon zest and juice. Mix on med. til light & fluffy. Beat in eggs one @ a time. Alternatly beat in flour mix & buttermilk til batter is smooth. Scrape into 10 C tube/bundt pan. Level w/ spatula.
Bake 55-65 mins til toothpick comes out clean. Cool 5 mins.
For sugar glaze: whisk til mixed. Brush over hot cake. Let cake set overnight before serving.
