White Fish & Spinach Bake

Ingredients

  • 2 white fish steaks (barramundi,halibut,or other)
  • 2 T. extra virgin olive oil
  • 2 cups fresh spinach
  • 1 cup sliced mini peppers in assorted colors
  • 1/4 yellow onion, rough chopped
  • 1 14 oz can stewed tomatoes
  • 2 t. garlic powder
  • 2 t. sea salt
  • 2 t. pepper
  • 1 T. ground Cumin
  • 2 T. fresh chopped cilantro
  • Juice of half a lemon

Preparation

Step 1

Heat oven to 375 F. Drizzle a little olive oil in the bottom of a medium sized baking dish. Layer in the spinach and drizzle with a little more olive oil. Place the peppers and onions on top and then the fish. Season with all seasonings. Top with stewed tomatoes.

Cover with foil and bake for 30-35 minutes or until fish flakes. Juice with the lemon before serving.
