Sesame and coconut chicken cutlets w/ lemony sauce

Ingredients

  • 2 chicken breasts, cut in 1/2 and pounded
  • 2 eggs
  • 1 tblsp sesame oil
  • 2 tsp water
  • 1/2 cup seasoned flour
  • 1/3 cup sesame seeds
  • 1/4 cup desicated coconut
  • 3 slices of bread, processed to a crumb
  • 1/3 cup coconut oil mixed w/ veg oil for frying
  • Sauce
  • 1/2 cup chicken broth
  • 1/4 cup honey
  • 3 tblsp lemon juice
  • 2 tblsp rice vinegar
  • 1/2 tblsp coconut oil
  • 2 tsp sesame oil
  • 1 tblsp catsup
  • 1 clove crushed garlic
  • 1 tsp ginger, grated
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Lemon zest
  • 1 tblsp ea cornstarch and water

Preparation

Step 1

Dip chicken into flour, then eggs, water and sesame oil, then bread crumbs , sesame seeds and coconut.Fry in oil till browned. Drain on paper towels.
Meanwhile, mix the sauce ingredients in a small saucepan and heat, whisking, till thick and warm.
Serve the cutlets with the sauce, either sliced or whole.
