Banana Blueberry Coffee Cake

This recipe is very moist and dense and rich like a coffee cake. The topping finishes off this coffee cake with a buttery, caramel, crunchy flavor. This coffee cake was a hit with my most critical critics. My daughters and sons in laws, who always try to one up me with a better recipe. This started out to be a banana bread, and I tweaked it with indgredients on hand, and turned it into a coffee cake. Great recipe for those who are lactose intollerant.
Another way I prepare this, is double the topping recipe, pour half the batter, sprinkle half the topping, then rest of batter. Sprinkle remaining topping.

Ingredients

  • 5 bananas, mashed
  • 3/4 c cup sugar
  • 3/4 cup lt. brown sugar
  • 3 eggs
  • 4 Tbs. butter, melted
  • 1 tsp. vanilla
  • 1 tsp. orange flavoring
  • Combine above indgredients and beat for 1 minute.
  • In seperate bowl combine and mix
  • 1 1/3 cups oatmeal (pulverized)
  • 1 1/2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • Add to beaten mixture and fold in
  • 1 1/2 cups blueberries
  • Topping;
  • 1/3 cup lt. brown sugar
  • 2 tbs. butter, softened
  • 1/2 cup oatmeal
  • 3/4 tsp. cinnamon
  • 1/3-1/2 cup chopped walnuts or pecans

Preparation

Step 1

mix topping until crumbly.
Pour batter into a greased Angel food pan or bundt pan. Sprinkle over top and bake;
350 oven for 45 minutes or until toothpick inserted comes out clean.
Cool on wire rack and serve....Enjoy!
