One-Tray Roast Salmon with Asparagus

Ingredients

  • 1 lemon, quartered
  • 750 g Anya or new potatoes, halved lengthways
  • 200 g fine asparagus
  • 4 salmon fillets, boneless
  • 1/2 x 75g bag watercress, thick stalks removed
  • 1 tbsp fresh chopped dill
  • Cooking spray

Preparation

Step 1

Preheat oven to 200 degrees C. Place lemon quarters and potatoes in a single layer on a baking tray coated with cooking spray. Spray to coat. Roast in the oven for 25 minutes.

Remove the tray from the oven and turn the potatoes. Add the asparagus and salmon to the tray and coat again lightly with cooking spray. Return to the oven for 10 minutes or until salmon is just cooked. Before serving, scatter over the watercress and dill.
