Banana Date,& Walnut Muffins

Ingredients

  • 2 cups whole wheat flour
  • 1/3 cup white sugar
  • 1/2 cup rolled oats
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 11/4 cups mashes bananas
  • 2 eggs
  • 3/4 cup plain low fat yogurt
  • 1/3 cup oil
  • 1 tsp. vanilla
  • 1/3 cup chopped walnuts
  • 3/4 cup chopped dates

Preparation

Step 1

Preheat oven to 375 deg.
Spray 12 cup muffin pan.
Combine flour,sugar,oats,baking powder,baking soda & cinnamon in a large bowl.
Combine bananas,eggs,yogurt,oil & vanilla in med. bowl.
Stir into flour mixture just until combined.
Stir in walnuts & dates.
Spoon batter into prepared pan mounded slightly.
Bake x 25 minutes. Cool x 10 minutes on wire rack.
Remove from pan & cool completely.
