Tomato Basil Soup

  • 1 lg onion chopped
  • 1/2 c butter
  • 6 tomotoes chopped
  • 2/3 c sherry or chix broth
  • 6-8 fresh basil leaves
  • 1 C cheddar cheese



Step 1

Saute onion in butter until goldern. Add tomatoes and sherry and basil; partly covered and simmer 30 minutes. Mash large chunks of tomatoes with a potatoe masher. top with cheese
